2 cups all-purpose flour
2 large eggs
1 tablespoon olive oil
1/2 teaspoon salt
1/2 pound ground beef
1/4 cup grated Parmesan cheese
1 clove garlic, minced
1/4 teaspoon black pepper
2 cups canned crushed tomatoes
1 tablespoon tomato paste
1 small onion, finely chopped
1 tablespoon olive oil (for sauce)
1 teaspoon dried basil
Salt and pepper to taste
Fresh basil or parsley for garnish (optional)
Instructions
In a mixing bowl, combine flour and salt. Make a well in the center, add eggs and olive oil, and mix to form a dough. Knead for 5-10 minutes until smooth. Let rest for 30 minutes covered.
Meanwhile, in a skillet over medium heat, cook ground beef until browned. Add garlic, salt, pepper, and cook for another 2 minutes. Remove from heat and mix in Parmesan cheese. Set aside to cool.
Roll out pasta dough into thin sheets. Place small spoonfuls of beef filling on one sheet, cover with another sheet, press around filling to seal, and cut into ravioli shapes.
