4 cups cooked chicken, shredded or cubed
4 cups broccoli florets, steamed
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup milk
1/2 cup sour cream
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
Salt and pepper to taste
1 1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 cup breadcrumbs
2 tablespoons melted butter (for topping)
Instructions
Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
In a medium saucepan, melt 2 tablespoons butter over medium heat. Whisk in flour and cook for 1 minute.
Gradually whisk in chicken broth and milk, stirring constantly until smooth and thickened, about 3-5 minutes.
Stir in sour cream, Dijon mustard, garlic powder, salt, and pepper. Add cheddar cheese and Parmesan cheese; stir until melted and smooth.
In the prepared baking dish, layer the broccoli and chicken evenly.
Pour the cheese sauce over the chicken and broccoli, spreading to cover evenly.
In a small bowl, mix breadcrumbs with 2 tablespoons melted butter and sprinkle over the top of the casserole.
Bake for 25-30 minutes or until the top is golden brown and the casserole is bubbly.
Let cool for 5 minutes before serving.
Notes
Use rotisserie chicken for convenience.
Frozen broccoli can be used—just thaw and drain well.
Top with extra cheese before baking for a cheesier crust.
