- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup rainbow sprinkles (plus extra for rolling)
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the egg and vanilla extract; beat until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture and mix until just combined.
- Fold in the rainbow sprinkles.
- Scoop tablespoon-sized balls of dough and roll in extra sprinkles if desired.
- Place on prepared baking sheets, spacing about 2 inches apart.
- Bake for 10–12 minutes or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Do not overbake for soft, chewy centers.
- Use jimmies-style sprinkles to avoid color bleeding.
- Chill dough for 30 minutes for thicker cookies.
