Ingredients

Units Scale
  • 12 oz penne pasta
  • 12 oz smoked sausage or andouille sausage, sliced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 1/2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp Cajun seasoning (adjust to taste)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned and crispy on the edges. Remove and set aside.
  3. In the same skillet, add diced onion and cook until translucent. Add garlic and sauté for about 1 minute.
  4. Pour in the heavy cream and bring to a simmer. Stir in Cajun seasoning, salt, and pepper. Cook for 4–5 minutes until the sauce slightly thickens.
  5. Add grated Parmesan cheese and stir until melted and the sauce is creamy.
  6. Return sausage to the skillet along with cooked pasta. Toss to coat evenly with the sauce.
  7. Garnish with chopped parsley and additional Parmesan if desired. Serve warm.
