Ingredients

  • 2 boneless chicken breasts

  • Salt and pepper to taste

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 2 cloves garlic, minced

  • 1 cup fresh spinach, chopped

  • 1/2 cup heavy cream

  • 1/2 cup shredded mozzarella or Parmesan cheese

 

  • 1/4 tsp nutmeg (optional)

Instructions

  1. Season chicken breasts with salt and pepper.

  2. In a skillet, heat oil and butter over medium heat. Cook chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.

  3. In the same pan, sauté garlic until fragrant. Add chopped spinach and cook until wilted.

  4. Stir in cream and cheese. Cook until thickened. Season with nutmeg, salt, and pepper.

  5. Return chicken to pan and coat with sauce. Simmer for 2 minutes.

  6. Serve with herbed potatoes and glazed or steamed carrots.

Notes

  • Add mushrooms or sun-dried tomatoes for an extra flavor boost.

 

  • Use frozen spinach if fresh is unavailable—just thaw and squeeze out liquid.
