2 ribeye or sirloin steaks
Salt & black pepper to taste
1 tbsp olive oil
2 tbsp butter
1 cup mushrooms, sliced
3 garlic cloves, minced
1/2 cup heavy cream
1/4 cup beef broth
1/4 tsp thyme or rosemary (optional)
2 tbsp chopped parsley (for garnish)
Season steaks with salt and pepper on both sides.
Heat olive oil in a skillet over high heat. Sear steaks 3–4 mins per side (for medium), then remove and let rest.
In the same skillet, reduce heat and melt butter. Add mushrooms and sauté until browned.
Stir in garlic and cook 30 seconds.
Add cream, beef broth, and thyme. Simmer until sauce thickens, 3–5 minutes.
Return steak to pan, spoon sauce over, and cook for 1–2 more mins.
Garnish with parsley and serve with fries.
Use heavy cream for the richest sauce.
For extra flavor, deglaze the pan with a splash of wine.
