A comforting and simple dish, creamy scrambled eggs served on warm bread buns make a nourishing and satisfying breakfast or light meal, rich in flavor and velvety in texture.

Ingredients

  • 4 eggs
  • 2 tbsp butter
  • 2 tbsp whole milk or cream
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp chopped fresh herbs (chives, parsley) (optional)
  • 2 bread buns or slices of your choice
  • Baby spinach or sautéed greens (optional)

Instructions

  1. In a bowl, whisk eggs with milk or cream, salt, and pepper until well combined and slightly frothy.
  2. Heat butter in a non-stick skillet over low heat until melted but not browned.
  3. Pour in the egg mixture and stir continuously with a silicone spatula or wooden spoon.
  4. Cook slowly, scraping the bottom of the pan regularly to form soft curds, until the eggs are just barely set.
  5. Remove from heat while still slightly runny; residual heat will finish cooking.
  6. Toast the bread buns lightly.
  7. Serve scrambled eggs over toasted buns, garnished with herbs and greens if using.
