12oz fusilli or penne pasta
2 tbsp olive oil
3 cloves garlic, minced
1 small onion, finely chopped
2 tbsp tomato paste
1 can (14 oz) crushed tomatoes or tomato sauce
1cup heavy cream
1/2cup grated Parmesan cheese
Salt and pepper, to taste
Fresh basil or parsley, for garnish
Seared beef cubes or chicken (optional)
Instructions
Cook pasta in salted water until al dente. Drain and set aside.
In a skillet, heat olive oil over medium heat. Sauté onion and garlic until soft and fragrant.
Add tomato paste and cook for 2 minutes, stirring constantly.
Pour in crushed tomatoes and let simmer for 10 minutes.
Stir in heavy cream and Parmesan cheese. Mix well until smooth.
Season with salt and pepper to taste.
Add the cooked pasta and toss to coat evenly with the sauce.
Serve hot, optionally topped with seared beef or chicken, and garnish with fresh herbs.
Notes
Add red pepper flakes for a spicy kick.
Use dairy-free cream and omit cheese for a vegan version.
Short pasta shapes like fusilli or penne hold the sauce best.
Reheat with a splash of cream or water to loosen the sauce.
Not recommended for freezing due to cream separation.
