4 boneless, skinless chicken breasts
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes (optional)
1/2 cup sun-dried tomatoes (in oil), drained and chopped
Season chicken breasts with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat. Sear chicken for 6–7 minutes per side or until golden brown and cooked through. Remove from skillet and set aside.
In the same skillet, add garlic and sauté for 1 minute until fragrant.
Stir in the heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer for 2–3 minutes until sauce begins to thicken.
Add sun-dried tomatoes and spinach to the skillet. Cook until spinach wilts, about 2–3 minutes.
Return chicken to the skillet, spooning sauce over the top. Simmer for another 2–3 minutes to heat through.
Garnish with fresh parsley and serve warm.
Notes
Substitute chicken thighs for an even juicier result.
This dish pairs well with pasta, mashed potatoes, or crusty bread.
Deglaze the pan with a splash of white wine for added flavor before adding cream.
