Creamy Tuscan Salmon

Pan-seared salmon fillets simmered in a creamy garlic Parmesan sauce with sun-dried tomatoes and spinach for a rich, Tuscan-inspired dish.

Ingredients

  • 4 salmon fillets
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Season salmon fillets with salt, pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat. Sear salmon for 3–4 minutes per side until golden. Remove and set aside.
  3. Add butter to the skillet and sauté garlic for 30 seconds.
  4. Stir in heavy cream, chicken broth, Parmesan, Italian seasoning, and sun-dried tomatoes. Simmer 2–3 minutes.
  5. Add spinach and cook until wilted.
  6. Return salmon to the pan and simmer another 3–4 minutes until cooked through.
  7. Garnish with basil and serve warm.

Notes

  • Use skin-on salmon for maximum moisture.
  • Replace spinach with kale if preferred.
  • Serve over pasta, mashed potatoes, rice, or crusty bread.
  • A splash of white wine can deepen the flavor.
