2 ripe avocados, firm
1/2cup all-purpose flour
2 large eggs
1 tablespoon water
1cup panko breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking spray
1/2cup Greek yogurt (for dipping sauce)
1 tablespoon lime juice
1 teaspoon hot sauce
1/2 teaspoon garlic powder (for sauce)
Salt to taste (for sauce)
Instructions
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
Cut avocados in half, remove the pit, peel, and slice into wedges.
Place flour in one bowl. In a second bowl, whisk eggs with water. In a third bowl, mix panko breadcrumbs with garlic powder, paprika, salt, and black pepper.
Dip each avocado slice in flour, then egg mixture, then coat with the breadcrumb mixture.
Place coated avocado slices on the prepared baking sheet and lightly spray with cooking spray.
Bake for 15–20 minutes, flipping halfway through, until golden and crispy.
While baking, mix Greek yogurt, lime juice, hot sauce, garlic powder, and salt to make the dipping sauce.
Serve avocado fries warm with the dipping sauce on the side.
Notes
Use slightly firm avocados for best results.
Adjust seasoning in breadcrumbs to taste.
The dipping sauce can be made ahead and stored in the fridge for up to 3 days.
