Crispy Baked Chicken Tenders are a healthier, oven-baked version of the classic fried favorite, featuring juicy chicken coated in a seasoned breadcrumb and cheese crust that delivers delicious crunch in every bite.

Ingredients

  • 1.5 lbs chicken tenderloins or boneless chicken breasts, sliced into strips
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 cup all-purpose flour
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Cooking spray or olive oil spray

Instructions

  1. Preheat oven to 220 °C (425 °F). Line a baking sheet with parchment or foil and spray with cooking oil.
  2. Whisk egg, mayonnaise, and Dijon mustard in one bowl.
  3. In another bowl, mix panko, Parmesan, flour, smoked paprika, garlic powder, salt, and pepper.
  4. Dip each chicken strip into the egg mixture, then coat in the breadcrumb mixture.
  5. Arrange chicken on the baking sheet and lightly spray tops with oil.
  6. Bake for 15–20 minutes, flipping halfway, until golden and cooked through (internal temp 75 °C/165 °F).
  7. Serve hot with your favorite dipping sauce.

  • Use gluten-free flour and breadcrumbs if needed.
  • Add shredded mozzarella for a cheesy crust variation.
