Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp dried thyme

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat chicken thighs dry with paper towels to ensure crispy skin.
  3. Place chicken thighs on a baking sheet lined with parchment paper or a wire rack.
  4. Brush the thighs with olive oil.
  5. In a small bowl, mix together salt, pepper, garlic powder, onion powder, paprika, and thyme.
  6. Sprinkle the seasoning mixture evenly over the chicken, rubbing it in for better coverage.
  7. Bake for 35–45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
  8. Let rest for 5 minutes before serving.

Notes

  • For extra crispy skin, bake on a wire rack to allow air circulation.
  • Do not cover the chicken during baking.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • Pair with roasted vegetables or a fresh salad for a balanced meal.
