1 lb ground beef
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
Salt and pepper, to taste
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
6 large flour tortillas
2 tablespoons vegetable oil (for pan-frying)
Instructions
Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 3 minutes.
Add garlic and cook for another 30 seconds until fragrant.
Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
Stir in cumin, chili powder, smoked paprika, salt, and pepper. Cook for 1–2 more minutes.
Remove from heat and let the mixture cool slightly. Stir in cheddar and mozzarella cheeses.
Lay out a tortilla, spoon beef and cheese filling in the center, and roll it tightly like a burrito. Repeat with remaining tortillas.
Heat vegetable oil in a skillet over medium heat. Place wraps seam-side down and cook until golden and crispy on all sides, about 2–3 minutes per side.
Remove from skillet and let rest for 2 minutes before slicing and serving.
Notes
Serve with salsa, sour cream, or guacamole for dipping.
You can prepare the wraps ahead of time and pan-fry just before serving.
