For the Chicken Bites:
1 lb boneless chicken breasts, cut into 1-inch pieces
1 cup all-purpose flour
1 cup breadcrumbs (panko recommended)
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
2 large eggs
1/4 cup milk
Oil for frying (or cooking spray for baking)
For the Dipping Sauce:
1/2 cup mayonnaise
2 tbsp honey
1 tbsp Dijon mustard
1 tbsp lemon juice
Instructions
In a bowl, mix flour, breadcrumbs, paprika, garlic powder, onion powder, salt, and pepper.
In a separate bowl, whisk eggs and milk together.
Dip each chicken piece into the egg mixture, then coat evenly in the breadcrumb mixture.
To Fry: Heat oil in a deep pan to 350°F (175°C). Fry chicken bites in batches for 4–5 minutes until golden and cooked through.
To Bake: Preheat oven to 425°F (220°C). Place coated chicken on a lined baking sheet, lightly spray with oil, and bake 15–18 minutes, flipping halfway.
Prepare the dipping sauce by mixing mayonnaise, honey, Dijon mustard, and lemon juice until smooth.
Serve chicken bites hot with dipping sauce.
Notes
Use panko breadcrumbs for the crispiest coating.
Add cayenne pepper for a spicy version.
Chicken thighs can be used for extra juiciness.
Serve with multiple sauces like BBQ, ranch, or sweet chili.
