1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup all-purpose flour
1/2 cup cornstarch
2 eggs, beaten
Salt and pepper to taste
Vegetable oil, for frying
1/3 cup honey
1/4 cup soy sauce
2 tablespoons rice vinegar
3 cloves garlic, minced
1 teaspoon grated fresh ginger
1 tablespoon water + 1 teaspoon cornstarch (for slurry)
Sesame seeds and sliced green onions, for garnish
Instructions
Season chicken pieces with salt and pepper.
Set up a dredging station with flour and cornstarch mixed in one bowl and beaten eggs in another.
Dip chicken pieces into the egg, then coat with the flour-cornstarch mixture. Set aside.
Heat vegetable oil in a deep skillet or pot over medium-high heat. Fry chicken in batches until golden brown and crispy, about 3–4 minutes per batch. Drain on paper towels.
In a small saucepan, combine honey, soy sauce, rice vinegar, garlic, and ginger. Bring to a simmer over medium heat.
Mix cornstarch and water to make a slurry, then stir into the sauce. Cook for 1–2 minutes until thickened.
Toss the fried chicken bites in the honey garlic sauce until evenly coated.
Garnish with sesame seeds and green onions. Serve immediately as is or over rice.
Notes
Double fry the chicken for extra crispiness.
You can prepare the sauce ahead of time and store it in the fridge for up to 3 days.
