Crispy Nashville Hot Chicken Wings are a bold and spicy appetizer or main dish, featuring fried chicken wings tossed in a fiery cayenne-based oil for that signature Nashville heat and crunch.

  • 2 lbs chicken wings, split and tips removed
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying
  • 1/4 cup cayenne pepper
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 cup hot frying oil (reserved)
  • Pickles and white bread, for serving (optional)

Instructions

  1. Place chicken wings in a bowl with buttermilk and let marinate for at least 1 hour, preferably overnight.
  2. In a separate bowl, mix flour, cornstarch, salt, and pepper.
  3. Remove wings from buttermilk, letting excess drip off, then dredge in the flour mixture. Press firmly to ensure good coating.
  4. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  5. Fry wings in batches for 8–10 minutes or until golden brown and cooked through. Drain on paper towels. Reserve 1/2 cup of the hot oil.
  6. In a heatproof bowl, mix cayenne pepper, brown sugar, garlic powder, and paprika. Carefully stir in the reserved hot oil to create the spicy glaze.
  7. Toss the fried wings in the hot oil spice mixture until fully coated.
  8. Serve immediately with pickles and white bread if desired.
