Ingredients

  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp fresh parsley, chopped (optional, for garnish)
  • Vegetable oil, for frying

Instructions

  1. In a bowl, mix mashed potatoes, egg, salt, pepper, and garlic powder until well combined.
  2. Form mixture into small patties.
  3. Coat each patty in flour, dip into beaten egg, then dredge in breadcrumbs.
  4. Heat vegetable oil in a skillet over medium heat.
  5. Fry patties in batches for 3–4 minutes per side, until golden and crispy.
  6. Remove and drain on paper towels. Garnish with fresh parsley if desired.
  7. Serve warm.
