1.5 lbs baby potatoes, halved
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1/2 tsp dried rosemary or thyme
Salt and pepper to taste
Optional: chopped fresh parsley for garnish
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, toss halved baby potatoes with olive oil, garlic powder, paprika, rosemary (or thyme), salt, and pepper until evenly coated.
Spread potatoes cut-side down in a single layer on the prepared baking sheet.
Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy on the outside.
Remove from oven and sprinkle with fresh parsley if using. Serve hot.
Notes
Use a mix of red, yellow, or purple baby potatoes for color and variety.
For extra crispiness, soak potatoes in cold water for 30 minutes before roasting, then pat dry.
Leftovers can be reheated in an oven or air fryer to restore crispiness.
