4 large russet potatoes
2 tbsp olive oil
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp cornstarch (optional, for extra crispiness)
For the honey mustard dip:
1/4cup mayonnaise
2 tbsp Dijon mustard
2 tbsp honey
1 tsp lemon juice or vinegar
Pinch of salt
Instructions
Wash and peel the potatoes if desired. Cut into thin strips and soak in cold water for at least 30 minutes.
Drain and dry the potatoes thoroughly using paper towels.
In a large bowl, toss the fries with olive oil, paprika, garlic powder, onion powder, salt, pepper, and cornstarch if using.
For baking: Preheat oven to 425°F (220°C). Spread fries in a single layer on a baking sheet and bake for 25–30 minutes, flipping halfway through, until golden and crispy.
For frying: Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry potatoes in batches until golden and crisp. Drain on paper towels.
In a small bowl, mix mayonnaise, Dijon mustard, honey, lemon juice or vinegar, and salt until smooth to make the dip.
Serve the hot fries immediately with chilled honey mustard dip.
Notes
Soaking the potatoes removes excess starch and improves crispiness.
For spicier fries, add cayenne pepper or chili powder.
Reheat leftovers in the oven or air fryer to retain crispiness.
Honey mustard dip can be made ahead and refrigerated.
