Crispy Zucchini Fritters with Yogurt Dip are golden, savory bites made from shredded zucchini, herbs, and Parmesan, pan-fried to perfection and paired with a tangy garlic yogurt sauce. Ideal as an appetizer, side dish, or light vegetarian meal.

Ingredients

  • 2 medium zucchinis, grated
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons chopped fresh parsley or dill
  • 2 green onions, finely chopped
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)
  • Yogurt Dip:
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Grate the zucchini and place in a colander. Sprinkle with salt and let sit for 10 minutes. Squeeze out as much moisture as possible using a clean towel.
  2. In a bowl, combine zucchini, flour, Parmesan, egg, parsley, green onions, and pepper. Mix well.
  3. Heat olive oil in a skillet over medium heat. Scoop 2 tablespoons of the batter per fritter into the pan and flatten slightly.
  4. Cook for 3–4 minutes per side, or until golden brown and crispy. Transfer to a plate lined with paper towels.
  5. To make the yogurt dip, mix Greek yogurt, lemon juice, garlic, salt, and pepper in a small bowl.
  6. Serve fritters warm with the yogurt dip on the side.

Notes

  • Be sure to remove as much moisture as possible from the zucchini to avoid soggy fritters.
  • For extra flavor, add a pinch of cumin or chili flakes to the batter.
  • These can also be baked or air-fried for a lighter option.
  • Great for meal prep—reheat in a pan to restore crispiness.
