This vibrant and refreshing Crunchy Red Cabbage Slaw combines crisp cabbage, sweet carrots, and a tangy citrus dressing to create a colorful, healthful side dish that pairs perfectly with tacos, grilled meats, and more.

Ingredients

  • 2 cups red cabbage, finely shredded
  • 1 cup carrots, julienned or grated
  • 2 green onions, thinly sliced
  • 2 tbsp fresh cilantro or parsley, chopped
  • Optional: 1/2 cup thinly sliced apple, mango, or jicama
  • 2 tbsp fresh lime or lemon juice
  • 1 tsp citrus zest
  • 2 tbsp olive oil or neutral oil
  • 1 tsp honey or maple syrup
  • 1/2 tsp Dijon mustard
  • 1 garlic clove, minced (optional)
  • Salt & freshly ground black pepper to taste

Instructions

  1. Finely slice cabbage and carrots, and thinly slice green onions. Combine in a large bowl. Add optional fruit or jicama if using.
  2. In a separate bowl, whisk lime or lemon juice, zest, oil, honey or maple syrup, mustard, garlic (if using), salt, and pepper until emulsified.
  3. Pour dressing over the slaw and toss thoroughly to coat.
  4. Let the slaw sit for 5–10 minutes to allow flavors to meld and cabbage to soften slightly.
  5. Transfer to serving dish and garnish with fresh herbs just before serving.

Notes

  • Use a mandoline or sharp knife for evenly thin slices.
  • Adjust dressing to taste for preferred tanginess or sweetness.
  • Chill before serving for best texture and flavor.
  • Add optional seeds or nuts just before serving to retain crunch.
