2 large cucumbers, thinly sliced
1/2 cup red onion, thinly sliced
3/4 cup crumbled feta cheese
1/4 cup fresh dill, chopped
2 tablespoons fresh lemon juice
2 tablespoons olive oil
Salt and pepper to taste
Instructions
Place sliced cucumbers and red onions in a large bowl.
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
Pour the dressing over the cucumber mixture and toss gently to coat.
Add crumbled feta and chopped dill, and lightly toss again.
Chill for 15-30 minutes before serving for best flavor.
Notes
Use English cucumbers or Persian cucumbers for fewer seeds and thinner skin.
You can substitute dill with fresh mint or parsley for a different flavor profile.
Best served chilled and fresh, but can be stored in the fridge for up to 2 days.
