Ingredients

8oz wheat or ramen noodles
1/2lb ground pork
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 green onions, chopped
2 tbsp soy sauce
1 tbsp Chinese black vinegar
2 tbsp sesame paste or peanut butter
2–3 tbsp chili oil (adjust to taste)
1 tsp sugar
1 tsp Sichuan peppercorns, crushed
1/4cup chicken broth or water
1 tbsp vegetable oil
Instructions
Cook noodles according to package instructions. Drain and set aside.
Heat vegetable oil in a pan. Sauté garlic and ginger until fragrant.
Add ground pork and cook until browned.
Stir in soy sauce, sugar, and crushed Sichuan peppercorns. Cook for 2 minutes.
In a separate bowl, mix sesame paste (or peanut butter), chili oil, vinegar, and chicken broth until smooth.
Combine sauce with cooked noodles and pork mixture. Toss to coat evenly.
Garnish with chopped green onions and extra chili oil as desired.
Serve immediately.
Notes
Swap pork with ground beef, turkey, or tofu.
Use peanut butter if sesame paste isn’t available.
Adjust spice with more or less chili oil.
Add greens like bok choy or spinach for extra nutrition.
