1 tablespoon coconut oil
1cup shelled pistachios
1cup dried cranberries
1/2 teaspoon sea salt (optional)
Instructions
Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
In a microwave-safe bowl, combine chopped dark chocolate and coconut oil; heat in 30-second intervals, stirring between each, until smooth and fully melted.
Reserve 2 tablespoons each of pistachios and cranberries for topping, then stir the remaining pistachios and cranberries into the melted chocolate.
Pour the mixture into the prepared pan and spread evenly.
Sprinkle reserved pistachios, cranberries, and sea salt over the top.
Refrigerate for 1–2 hours or until set.
Lift the chocolate slab from the pan using the parchment overhang and cut into bars or squares.
Notes
For a festive look, use a mix of dried cherries and cranberries.
Store bars in an airtight container in the refrigerator for up to 2 weeks.
Use at least 70% cacao dark chocolate for a richer flavor.
