These Fancy Eclairs are the ultimate pastry indulgence, filled with creamy goodness and topped with vibrant glazes, nuts, fresh berries, and cookie crumbs. A modern twist on a classic French dessert.

Ingredients

Choux Pastry:

  • 1/2 cup unsalted butter

  • 1 cup water

  • 1/4 tsp salt

  • 1 cup all-purpose flour

  • 4 large eggs

Pastry Cream Filling:

 

  • 2 cups milk

  • 1/2 cup sugar

  • 1/4 cup cornstarch

  • 4 egg yolks

  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • In a saucepan, bring butter, water, and salt to a boil. Add flour and stir vigorously.

  • Let it cool slightly, then beat in eggs one at a time until dough is smooth.

  • Pipe into long eclair shapes and bake for 30 minutes or until golden. Let cool.

  • Prepare pastry cream by heating milk, sugar, and cornstarch until thickened.

  • Whisk in yolks, then butter and vanilla. Chill.

 

  • Fill eclairs with cream, dip tops in glaze, and decorate with toppings.

Notes

  • Chill pastry cream for at least 2 hours for best piping consistency.

 

  • You can use flavored glazes like strawberry, lemon, or chocolate.
