1 cup brown sugar
1 cup granulated sugar
1 1/2 cups creamy peanut butter
3 large eggs
1 tablespoon vanilla extract
4 1/2 cups old-fashioned rolled oats
2 teaspoons baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
1 cup semisweet chocolate chips
1 cup red and green candy-coated chocolate pieces (like holiday M&M’s)
1/2 cup mini chocolate chips
1/2 cup holiday sprinkles (optional)
Instructions
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
Mix in peanut butter, eggs, and vanilla until well combined.
In a separate bowl, whisk together oats, baking soda, salt, and flour.
Gradually add dry ingredients to wet ingredients and mix until fully incorporated.
Stir in chocolate chips, mini chips, candy pieces, and sprinkles if using.
Scoop heaping tablespoons of dough onto prepared baking sheets, spacing them 2 inches apart.
Bake for 10–12 minutes or until edges are golden and centers are set but soft.
Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Notes
Do not overbake—cookies continue to cook slightly after removing from the oven.
Use a cookie scoop for uniform size and even baking.
