Ingredients

  • 24 white fish fillets (sea bass, cod, or tilapia)
  • 1 cup cherry tomatoes (mixed red and yellow)
  • 1 fresh lemon, thinly sliced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • Sea salt, to taste
  • Cracked black pepper, to taste
  • Crushed red pepper flakes (optional, to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the fish fillets in a baking dish or on a parchment-lined baking tray.
  3. Arrange cherry tomatoes and lemon slices around the fish.
  4. Drizzle olive oil over the fish and vegetables.
  5. Sprinkle minced garlic, salt, pepper, and red pepper flakes (if using) evenly over everything.
  6. Bake for 15–20 minutes, or until the fish is opaque and flakes easily with a fork.
  7. Garnish with freshly chopped parsley and serve hot.

Notes

  • Use a mix of red and yellow cherry tomatoes for visual appeal.
  • Thawed frozen fish fillets can be used—just pat dry first.
  • Add fresh herbs or a splash of white wine for variations.
