Ingredients

  • 3 ears fresh corn, kernels removed
  • 1 1/2 cups cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Bring a pot of water to a boil and cook corn kernels for 2–3 minutes, then drain and let cool.
  2. In a large bowl, combine cooled corn, cherry tomatoes, feta cheese, and chopped mint.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
