2cups fresh strawberries, hulled and sliced
1/2cup walnuts, roughly chopped
1/4cup red onion, thinly sliced
1/4cup feta cheese or goat cheese (optional)
3 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon honey or maple syrup
1 teaspoon Dijon mustard
Salt and black pepper, to taste
Instructions
In a large salad bowl, combine baby spinach, sliced strawberries, walnuts, red onion, and cheese if using.
In a small bowl or jar, whisk together olive oil, balsamic vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper until well blended.
Drizzle the dressing over the salad just before serving.
Toss gently to coat all ingredients evenly.
Serve immediately for best texture and flavor.
