Instructions
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a bowl, whisk together flour, baking soda, and salt. Set aside.
In a large bowl, cream together butter and sugar until light and fluffy.
Beat in the egg, lemon juice, lemon zest, and vanilla extract until combined.
Gradually mix in the dry ingredients until a soft dough forms.
Scoop tablespoon-sized balls of dough onto prepared baking sheets, spacing about 2 inches apart.
Bake for 10–12 minutes, or until edges are lightly golden. Cool completely on a wire rack.
For the frosting, beat together powdered sugar, butter, lemon juice, and lemon zest until smooth and creamy.
Frost cooled cookies with the lemon frosting. Allow frosting to set before storing.
Notes
Use fresh lemon juice and zest for the best flavor.
Chill dough for 20 minutes before baking for thicker cookies.
