Fruity Pebble Pancakes are a fun and colorful twist on classic pancakes, featuring the vibrant crunch and sweet flavor of Fruity Pebbles cereal. Perfect for kids and nostalgic adults, these pancakes are a playful way to brighten up breakfast.

Ingredients

  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tbsp melted butter (plus more for the pan)
  • 1 tsp vanilla extract
  • 1 cup Fruity Pebbles cereal (plus extra for topping)
  • Optional: whipped cream or syrup for serving

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
  4. Gently fold in the Fruity Pebbles cereal.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and edges are set, about 2–3 minutes.
  7. Flip and cook for another 1–2 minutes until golden brown and cooked through.
  8. Repeat with the remaining batter, greasing the pan as needed.
  9. Serve warm topped with whipped cream, syrup, and a sprinkle of extra Fruity Pebbles.

Notes

  • Add Fruity Pebbles just before cooking to preserve texture.
