A fun and festive Funfetti Cake bursting with colorful sprinkles, perfect for birthdays and celebrations.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large egg whites
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • 1/2 cup sour cream
  • 1/2 cup rainbow sprinkles (jimmies)
  • Frosting of choice (e.g., vanilla buttercream)
  • Additional sprinkles for decorating

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat butter and sugar together until light and fluffy.
  4. Add egg whites and vanilla extract; mix until combined.
  5. Mix in sour cream, then alternate adding milk and dry ingredients until just combined.
  6. Gently fold in rainbow sprinkles.
  7. Divide batter evenly between prepared pans and smooth the tops.
  8. Bake for 25–30 minutes or until a toothpick comes out clean.
  9. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  10. Frost with vanilla buttercream and decorate with additional sprinkles.

Notes

  • Use jimmies-style sprinkles to avoid color bleeding in the batter.
  • Make sure ingredients are at room temperature for best results.
  • Cake layers can be made ahead and frozen for up to a month.
