Funfetti Marshmallow Cake Bites are colorful, bite-sized treats made with funfetti cake mix, marshmallows, and white chocolate. These cheerful no-bake goodies are perfect for parties, birthdays, or festive snacking.

  • 1 box (15.25 oz) funfetti cake mix
  • 2 cups mini marshmallows
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • Sprinkles (optional, for garnish)

Instructions

  1. Line an 8×8-inch pan with parchment paper and set aside.
  2. In a large saucepan over medium heat, melt the butter.
  3. Add mini marshmallows and stir constantly until fully melted and smooth.
  4. Remove from heat and stir in vanilla extract.
  5. Quickly add the funfetti cake mix and stir until fully combined and smooth.
  6. Transfer the mixture to the prepared pan and press it evenly into the pan using a spatula or wax paper.
  7. In a microwave-safe bowl, melt white chocolate chips in 30-second intervals, stirring between each, until smooth.
  8. Pour the melted white chocolate over the top of the cake mixture and spread evenly.
  9. Top with sprinkles while the chocolate is still wet.
  10. Let set at room temperature or chill in the refrigerator for about 1 hour before cutting into small squares or bites.

Notes

  • Make sure to heat treat raw cake mix before using by microwaving it for 1–2 minutes, stirring every 30 seconds.
  • Use wax paper or greased hands to press the mixture into the pan easily.
  • Store in an airtight container at room temperature for up to 4 days.
