Ingredients
UnitsScale
1lb pork tenderloin or pork loin, cut into bite-sized cubes
Salt and pepper, to taste
1/2 tsp garlic powder (optional)
1 tbsp olive oil
2 tbsp unsalted butter
3 garlic cloves, minced
1/2cup chicken or vegetable broth
1/2cup reserved pasta cooking water
1/2cup heavy cream
1cup grated Parmesan cheese
8oz pasta (fettuccine, linguine, or penne)
Fresh parsley, chopped (for garnish)
Instructions
Cook pasta according to package directions until al dente. Reserve 1/2 cup of cooking water, then drain pasta.
Season pork bites with salt, pepper, and optional garlic powder.
Heat olive oil in a large skillet over medium-high heat. Brown pork on all sides until cooked through, then transfer to a plate.
Reduce heat to medium, melt butter in the same skillet, and sauté garlic until fragrant.
Add broth and reserved pasta water, stirring to deglaze the pan.
Pour in cream and bring to a gentle simmer.
Stir in Parmesan cheese until the sauce thickens slightly.
Return pork bites to the skillet and toss to coat in the sauce.
Add cooked pasta and mix to combine and coat evenly with sauce.
Garnish with chopped parsley and serve warm.
Notes
Use a meat thermometer to avoid overcooking pork—145°F is ideal.
Add vegetables like spinach or mushrooms for variety.
Half-and-half or milk with a bit of flour can replace heavy cream.
Let sauce cool slightly before adding Parmesan to prevent graininess.
Leftovers reheat best in a skillet with a splash of cream or broth.
