1.5 lbs sirloin steak, cut into 1-inch cubes
1 tbsp olive oil
4 tbsp unsalted butter
4 cloves garlic, minced
Salt and pepper, to taste
1 tbsp chopped fresh parsley (optional, for garnish)
2 lbs potatoes (Yukon Gold or Russet), peeled and cubed
4 tbsp butter (for mashed potatoes)
½ cup milk or heavy cream
Salt and pepper, to taste (for mashed potatoes)
Instructions
Bring a large pot of salted water to a boil. Add potatoes and cook until fork-tender, about 15–20 minutes. Drain and mash with butter, milk or cream, salt, and pepper. Set aside and keep warm.
While potatoes cook, season steak cubes with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add steak in a single layer (cook in batches if needed) and sear for 2–3 minutes per side until browned and cooked to desired doneness. Remove from skillet and set aside.
Reduce heat to medium and add butter to the same skillet. Once melted, stir in garlic and cook for 1 minute until fragrant.
Return steak bites to the skillet and toss to coat in the garlic butter. Cook for 1–2 minutes more.
Serve steak bites over mashed potatoes and garnish with chopped parsley if desired.
Notes
Use a hot skillet to get a nice sear on the steak.
Do not overcrowd the pan—cook steak bites in batches if necessary.
For creamier mashed potatoes, use heavy cream instead of milk.
Sirloin works best, but ribeye or strip steak can be used.
