4 large russet potatoes
3 tablespoons olive oil
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Wash and peel the potatoes, then cut them into thin fries.
Soak the cut potatoes in cold water for 30 minutes to remove excess starch. Drain and pat dry thoroughly.
In a large bowl, toss the fries with olive oil, salt, and pepper.
Spread the fries in a single layer on the prepared baking sheet. Bake for 30–35 minutes, flipping halfway through, until golden and crispy.
While the fries are baking, heat a small pan over low heat and gently sauté the minced garlic in 1 teaspoon olive oil for about 1 minute until fragrant but not browned.
Remove the baked fries from the oven and immediately toss with sautéed garlic, Parmesan cheese, and chopped parsley.
Serve hot with your favorite dipping sauce if desired.
Notes
For extra crispiness, bake fries on a wire rack placed over the baking sheet.
Use freshly grated Parmesan for the best flavor and texture.
Optional: Sprinkle with red pepper flakes for a spicy kick.
