  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon almond extract
  • 1/2 cup finely chopped maraschino cherries (drained and patted dry)
  • 1/2 cup vanilla or almond frosting
  • 2 cups powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon almond extract (for glaze)
  • Optional: extra chopped cherries or sliced almonds for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Prepare the cake batter according to the package directions, substituting almond extract for part of the water if desired.
  2. Fold in the chopped cherries and bake in a 9×13-inch pan for 25–30 minutes, or until a toothpick inserted comes out clean. Let the cake cool completely.
  3. Crumble the cooled cake into a large bowl and mix with frosting until a thick dough forms.
  4. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  5. Freeze for 30 minutes to firm up.
  6. In a small bowl, whisk together powdered sugar, milk, and almond extract until smooth to form the glaze.
  7. Dip each cake ball into the glaze, letting excess drip off, and place back on the parchment paper.
  8. Garnish with sliced almonds or cherry pieces if desired.
  9. Allow glaze to set for about 30 minutes before serving or storing.
