Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 1 clove garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/2 tsp black pepper
  • 2 cups cooked white or brown rice
  • 1 large ripe mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice (for salsa)
  • Salt to taste

Instructions

  1. In a small bowl, whisk together soy sauce, honey, lime juice, garlic, ginger, and black pepper to make the glaze.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add chicken breasts and cook for 5–6 minutes per side, brushing with glaze, until golden and cooked through (internal temp 165°F).
  4. Meanwhile, prepare the mango salsa by combining mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Toss well and set aside.
  5. Once chicken is cooked, drizzle with remaining glaze and let rest for 2 minutes.
  6. Serve chicken over a bed of rice, topped with fresh mango salsa.

Notes

  • You can substitute chicken thighs for juicier meat.
  • Adjust spice level by adding more or less jalapeño to the salsa.
  • Try coconut rice for an extra tropical twist.
