2 1/2cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1cup unsalted butter, softened
1cup sugar
1 egg
2 tbsp lemon juice
Zest of 1 lemon
1 tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Make cookie dough: Whisk flour, baking powder, and salt. In another bowl, beat butter and sugar until fluffy. Add egg, lemon juice, zest, and vanilla. Mix in dry ingredients.
Bake: Scoop dough onto baking sheet and bake for 10–12 minutes.
Make glaze: Mix powdered sugar and lemon juice until smooth.
Glaze cookies: Once cooled, dip or drizzle cookies with glaze. Let set before serving.
Notes
For extra lemon flavor, add more zest.
