Ingredients

1 1/2 cups corn kernels (fresh, frozen, or canned and drained)
1/4 cup chopped fresh chives
1/2 cup all-purpose flour
1/4 cup cornmeal
1/2 tsp baking powder
2 large eggs
1/4 cup milk
Salt and pepper to taste
Vegetable oil, for frying
Optional: pinch of paprika or chili flakes for extra flavor
Instructions
In a large mixing bowl, combine flour, cornmeal, baking powder, salt, pepper, and optional paprika or chili flakes.
In a separate bowl, whisk together eggs and milk until well combined.
Add the egg mixture to the dry ingredients and mix to form a thick batter.
Fold in the corn kernels and chopped chives.
Heat about 1/2 inch of vegetable oil in a skillet over medium heat.
Drop spoonfuls of batter into the hot oil, shaping into small wedge-like fritters.
Fry for 2–3 minutes per side, or until golden and crisp.
Remove and drain on paper towels. Serve warm with your favorite dipping sauce.
Notes
Make sure the oil is hot enough before frying to ensure crispiness.
You can use spring onions if chives aren’t available.
These can be made ahead and reheated in the oven or air fryer.
