Ingredients

Scale
  • 1 block (14 oz) extra-firm tofu, pressed and sliced into 4 steaks
  • 1 tbsp olive oil (for tofu)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 2 cups mixed greens (spinach, kale, or chard)
  • 1 tbsp olive oil (for greens)
  • 2 cloves garlic, minced
  • For the Lemon Butter Sauce:
  • 2 tbsp vegan butter
  • 1 tbsp lemon juice
  • 1/2 tsp lemon zest
  • 1 tsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Press tofu for at least 15 minutes to remove excess moisture. Slice into 4 even steaks.
  2. Mix thyme, rosemary, garlic powder, salt, and pepper, then rub onto tofu steaks.
  3. Heat 1 tbsp olive oil in a skillet over medium heat. Sear tofu steaks for 4–5 minutes per side until golden and crispy. Set aside.
  4. In another pan, heat 1 tbsp olive oil and sauté garlic for 30 seconds. Add greens and cook for 2–3 minutes until wilted. Season with salt and pepper.
  5. To make the lemon butter sauce, melt vegan butter in a small saucepan over low heat. Stir in lemon juice, zest, parsley, salt, and pepper. Simmer for 1 minute.
  6. Plate tofu over sautéed greens and drizzle with lemon butter sauce. Serve immediately.

Notes

  • Marinate tofu in lemon juice and herbs for 30 minutes for deeper flavor.
  • Use a non-stick or cast iron skillet to get the best tofu crust.
  • Add chili flakes for a spicy kick to the sauce.
  • Serve with rice, quinoa, or roasted potatoes for a complete meal.
