  • 1.5 lbs baby or Yukon gold potatoes, halved
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1/2 tsp garlic powder
  • 2 large yellow onions, thinly sliced
  • 1 tbsp butter (or olive oil for vegan)
  • 1/2 tsp sugar (optional, to enhance caramelization)
  • For the Creamy Drizzle:
  • 1/2 cup sour cream or Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Toss halved potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 30–35 minutes, flipping halfway, until golden and crispy.
  2. Meanwhile, heat butter in a large skillet over medium-low heat. Add sliced onions and cook slowly, stirring occasionally, for 25–30 minutes until deeply golden and caramelized. Add sugar partway through if needed.
  3. In a small bowl, whisk together sour cream, lemon juice, Dijon mustard, minced garlic, salt, and pepper to make the creamy drizzle. Chill until ready to serve.
  4. When potatoes are done, toss with the caramelized onions and transfer to a serving dish.
  5. Drizzle with the creamy sauce and garnish with fresh herbs if desired. Serve warm.

  • Use a mix of red and yellow onions for more depth of flavor.
  • Make it vegan with dairy-free butter and plant-based yogurt or sour cream.
