  • 8 oz cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lime juice
  • 1 tbsp lime zest
  • 1 tbsp unflavored gelatin or 1 tsp agar-agar
  • 2 tbsp hot water (to dissolve gelatin)
  • 1 cup whipping cream
  • 2 tbsp sugar
  • Optional: Green food coloring
  • Optional: Whipped topping and lime slices for garnish

Instructions

  1. Combine cookie crumbs and melted butter in a bowl. Mix well and press into a lined baking dish to form the crust. Chill for 15 minutes.
  2. In a separate bowl, beat softened cream cheese until smooth. Add sweetened condensed milk and mix until fully combined.
  3. Stir in fresh lime juice, lime zest, and green food coloring if using.
  4. Dissolve gelatin or agar-agar in hot water and let cool slightly. Stir into the lime mixture.
  5. In another bowl, whip the cream with sugar until stiff peaks form. Gently fold into the lime mixture.
  6. Pour the combined filling over the chilled crust and smooth the surface evenly.
  7. Refrigerate for at least 4 hours or until fully set.
  8. Before serving, garnish with whipped topping, lime slices, or mint leaves.
  9. Cut into clean slices using a sharp, heated knife for best presentation.
