1 1/2cups graham cracker or chocolate biscuit crumbs
1/4cup melted butter
8oz cream cheese, softened
1 can (14 oz) sweetened condensed milk
1/4cup lime juice (freshly squeezed)
1 tablespoon lime zest
1/4cup sugar
1 tablespoon unflavored gelatin
1/4cup warm water (for dissolving gelatin)
Green food coloring (optional)
Instructions
Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of an 8×8-inch pan. Chill for 20 minutes.
In a separate bowl, beat cream cheese until smooth.
Add sweetened condensed milk, lime juice, lime zest, and sugar. Mix until fully combined.
Dissolve gelatin in warm water, let cool slightly, and mix into the lime filling.
Optional: divide the filling and add green food coloring to half for a layered effect.
Pour alternating layers into the chilled crust to create a striped look. Tap pan to smooth layers.
Refrigerate for at least 4 hours, or until fully set.
Slice with a hot knife and serve chilled. Garnish with whipped cream or mint if desired.
Notes
Use key limes for a sharper citrus flavor.
Make ahead and chill overnight for best results.
Can be frozen without garnish and thawed before serving.
