1.5lbs boneless, skinless chicken breasts, cut into 1.5-inch pieces
3 bell peppers (red, yellow, green), cut into 1.5-inch pieces
2 tbsp olive oil
2 tbsp lemon juice
3 cloves garlic, minced
1 tsp dried oregano
1 tsp smoked paprika
Salt and pepper to taste
Wooden or metal skewers
Instructions
In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper to make the marinade.
Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
If using wooden skewers, soak them in water for 30 minutes to prevent burning.
Preheat the grill to medium-high heat.
Thread the marinated chicken and bell pepper pieces alternately onto the skewers.
Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks.
Remove from grill and let rest for a few minutes before serving.
Notes
Can be served with rice, couscous, or pita bread.
Try adding onions or zucchini for more variety.
Marinate the chicken overnight for even more flavor.
