Ingredients

Units Scale
  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1/2 cup Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 4 pita breads or flatbreads
  • 1/2 cucumber, sliced
  • 1/2 red onion, sliced
  • 1 cup chopped tomatoes
  • 1/4 cup fresh parsley or cilantro, chopped
  • Tzatziki sauce (store-bought or homemade)

Instructions

  1. Mix Greek yogurt, olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper in a bowl. Add chicken, coat well, and marinate for at least 1 hour in the fridge.
  2. Preheat grill or grill pan over medium-high heat. Grill chicken for 5–6 minutes per side until cooked through (75 °C/165 °F internal temperature).
  3. Rest chicken 5 minutes, then slice into strips.
  4. Warm pita bread slightly. Fill with chicken, cucumber, onion, tomatoes, and herbs. Spoon tzatziki over top.
  5. Roll or fold and serve immediately.

Notes

  • Use full-fat Greek yogurt for best flavor and consistency.
  • Chicken can be baked at 200 °C (400 °F) for 20–25 minutes as an alternative.
  • Add hot sauce or chili flakes to the marinade for a spicy version.
  • Make it gluten-free with GF pita or serve as a bowl.
  • Store marinated chicken raw or cooked for easy meal prep.
