Grilled Chicken Kebab is a flavorful and juicy dish made by marinating chunks of chicken in a spiced yogurt mixture and grilling them on skewers. It’s a versatile and healthy meal perfect for outdoor cooking, barbecues, or weeknight dinners.

  • 1.5 lbs boneless, skinless chicken breast or thighs, cut into 1.5-inch cubes
  • 1/2 cup plain yogurt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 red bell pepper, cut into chunks (optional)
  • 1 green bell pepper, cut into chunks (optional)
  • 1 red onion, cut into chunks (optional)
  • Metal or soaked wooden skewers

Instructions

  1. In a bowl, mix yogurt, olive oil, lemon juice, garlic, cumin, paprika, turmeric, chili powder, black pepper, and salt to create a marinade.
  2. Add chicken pieces to the marinade and mix to coat evenly. Cover and refrigerate for at least 1 hour, preferably 4–6 hours.
  3. Preheat grill to medium-high heat.
  4. Thread marinated chicken onto skewers, alternating with bell peppers and onions if using.
  5. Grill kebabs for 10–15 minutes, turning occasionally, until chicken is cooked through and has a nice char.
  6. Remove from grill and let rest for a few minutes. Serve with rice, salad, or flatbread.

Notes

  • For extra flavor, marinate chicken overnight.
  • Soak wooden skewers in water for at least 30 minutes to prevent burning.
  • You can bake the kebabs in the oven at 425°F (220°C) for 20–25 minutes if a grill is not available.
  • Serve with garlic sauce, hummus, or tzatziki for added flavor.
