3 garlic cloves, minced (divided)
1/4cup onion, finely chopped
2 tbsp fresh parsley or basil, chopped
1 egg
1/3cup breadcrumbs
Salt and black pepper to taste
1 tbsp olive oil (for grilling)
1 tbsp butter
1/2cup chicken broth
3/4cup heavy cream
1/3cup grated Parmesan cheese
Instructions
In a bowl, mix ground chicken, 2 minced garlic cloves, onion, parsley, egg, breadcrumbs, salt, and pepper until well combined.
Shape into small meatballs using damp hands.
Preheat grill or grill pan to medium heat and brush with olive oil.
Grill meatballs for 10–12 minutes, turning occasionally, until golden and cooked through.
In a skillet, melt butter and sauté the remaining garlic until fragrant.
Add chicken broth and bring to a simmer, then stir in heavy cream and Parmesan cheese. Cook until the sauce thickens slightly.
Add grilled meatballs to the sauce and simmer for 2–3 minutes until heated through.
Serve hot over pasta, rice, or vegetables.
Notes
Use turkey or beef instead of chicken if preferred.
Add red pepper flakes to the sauce for a spicy kick.
Swap heavy cream with Greek yogurt for a lighter version.
Stir in spinach or mushrooms for added nutrition.
Deglaze pan with white wine before adding broth for extra flavor.
