2 boneless, skinless chicken breasts
2 tbsp olive oil
1 tsp dried oregano
1/2 tsp garlic powder
Salt and pepper, to taste
4cups mixed salad greens
1cup cherry tomatoes, halved
1cup cucumber, sliced
1/2cup red bell pepper, sliced
1/4cup red onion, thinly sliced
1/2cup feta cheese, crumbled
2 tbsp lemon juice
1 tbsp balsamic vinegar
Instructions
Preheat grill or grill pan over medium-high heat.
Rub chicken breasts with 1 tbsp olive oil, oregano, garlic powder, salt, and pepper.
Grill chicken for 5–7 minutes per side, or until fully cooked (internal temperature reaches 165°F / 74°C). Let rest for 5 minutes before slicing.
In a large bowl, combine salad greens, cherry tomatoes, cucumber, bell pepper, and red onion.
Whisk together remaining olive oil, lemon juice, and balsamic vinegar to make the dressing.
Arrange sliced grilled chicken over the salad, sprinkle with feta cheese, and drizzle with dressing.
Toss gently before serving.
Notes
For extra flavor, marinate chicken for at least 30 minutes before grilling.
Substitute feta with goat cheese or mozzarella for a different twist.
Great served with warm pita bread or a side of hummus.
